Description
Chicken and Dumplings, a classic comfort food made just a little bit easier.
Ingredients
To prepare the chicken:
2-3 pounds of boneless skinless chicken breast or thighs or a combination of both. You could
also use a store bought Rositery Chicken, just remove the skin and meat off the bones and
skip the cooking of course.
4 cups cold water
1 teaspoon Tony’s creole seasoning (Or to taste). You can also use your favorite seasoning
mix.
1 teaspoon Kosher salt
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
½ teaspoon dried thyme
¼-½ teaspoon ground sage
8 cups (32 oz) of your favorite Chicken Broth
4 tablespoon butter (half stick)
To prepare the drop dumplings:
2 cups Bisquick Mix
⅔ - ¾ cup milk (you want the batter to be on the thick side, will slowly fall off the spoon)
Instructions
Add 4 cups of cold water to a large saucepan, add creole seasoning, salt, pepper, garlic and
onion powder, the thyme, ground sage and the chicken. Bring to a boil, reduce heat to
medium and simmer for 45 minutes or until chicken is cooked through.
Remove cooked chicken from the pan and allow it to cool if you are going to use your hands
to pull apart. You can also use 2 forks to pull apart while hot. Pull the chicken apart and set
aside.
In a large Dutch oven add the 8 cups of chicken broth, the half stick butter and bring to a
boil while making the dumplings.In a medium sized bowl add 2 cups of Bisquick and ⅓ cup
milk, mix together, adding more milk if needed to make a thick batter.
When broth has come to a boil add half of the pulled chicken, drop dumplings by tablespoon
or scope around the pan . When all dumplings are in the pan, reduce heat to a high simmer
and cook for 10 - 15 minutes. Dumplings should almost double in size and be fluffy.
If desired take a dumpling out of the pot and cut in half. It should be moist but not doughy.

Additional Comments
The water and spices I used to cook the chicken turned into a delicious stock. While I did not
use in the final recipe you could, just add enough additional broth to it to make 8 cups. I
used it the next day to make Chicken Soup.
